Our In-House Dry Ager​​​

Our on-site, climate-controlled dry-aging cabinet is where the transformation begins. By meticulously managing airflow, humidity, and temperature, we ensure every prime cut of beef matures to its absolute peak.
This traditional dry-aging process allows natural enzymes to tenderise the meat, creating a depth of flavour and buttery texture you won't find elsewhere in Southampton. It is the intersection of science and culinary craft, resulting in the perfectly aged steak.
